If you are looking for a classic cake that packs a punch, the classic carrot cake is the way to go. And, no, it doesn’t taste like you’re eating a bundle of carrots, but a delightfully spicy and sweet cake. Paired with a cream cheese frosting, this carrot cake is rich and comforting.

The combination of spice and sweetness between the sponge and frosting is nicely balanced. If you want to make this vegan-friendly, you can always bump up the applesauce or use vegetable oil. When it’s all baked, decorate however you like. I tend to decorate it differently each time I make it. It goes well with a nice cup of cocoa or coffee.
